Tamed in New Jersey
Blueberries grew wild across North America for thousands of years before anyone farmed them. The cultivated highbush blueberry was only tamed in the early 1900s, when botanist Frederick Coville and grower Elizabeth White worked together in New Jersey to select the best wild bushes, and the first commercial crop was sold in 1916.
The dusty blue bloom
The pale, powdery coating on a fresh blueberry is called the bloom. It is a natural wax the fruit makes to protect itself. The deep blue-purple colour underneath comes from anthocyanins, the same pigments that give red cabbage and black grapes their colour.
